Codorniu Wine Cellers in Barcelona Spain.
We learned about the making of wine and sparking wine. Champagne is the sparkling wine made in France, the Spainiards call their sparking wine, Cava. Greg was very impressed with how they removed the sediment from each bottle. It seems that they turn the bottle up side down and allow it to settle for 52 days turningit every few days. At the end of the period the neck of the bottle is submerged in sub zero liquid where only the sparkling wine with the sediment is frozen, then the top is removed where the pressure that has built up will push the ice cube containg the sediment out, leaving you with a pure sparkling wine. We tasted Cava and purchased several bottles.
